Melba is an aroma hop that is typically used in only late boil additions, including dry hopping.
Melba hops have passion fruit, grapefruit, citrus and summery aroma characteristics. When used as an early addition, it is said to impart a clean and somewhat spicy bitterness. When used as a flavour or aroma addition, though, properties of passion fruit, grapefruit and citrus come to the fore.
How to Use (General Steeping Method):
Steep: Place the hop sachet in a cup of boiling water (about 1 cup).
Wait: Let it steep for 10 minutes to extract flavours and aromas.
Add: Pour the steeped liquid and the hop bag into your wort (unfermented beer) at the desired stage (late boil, whirlpool, or to the fermenter after peak fermentation).
When to Add:
Late Boil/Whirlpool: For flavour and some aroma.
Fermenter (Dry Hopping): For maximum aroma, after fermentation slows.
